Prepping breakfast can be time-consuming and soaking chia seeds overnight takes the time out of rushed prep in the morning, giving you a breakfast that you can grab and go.

Strawberry Chia Pudding contains a whooping 15g dietary fibre per serve!

Strawberry Chia Pudding is a recipe that can be adapted to suit the ingredients you have to hand. Of course, if you don’t have strawberries available, you can use alternative fruits. I always recommend using seasonal options, frozen strawberries or other frozen fruit options such as mixed berries or mango.

Dietary fibre is a key macronutrient that the vast majority of people simply don’t consume enough of and the Strawberry Chia Pudding has got you covered. This recipe has got a whooping 15g of dietary fibre. This is largely coming from the chia seeds and secondly from the strawberries. Dietary fibre forms an essential part of gut health. Not only does it play an important role in keeping our gut healthy and ensuring regular bowel movements, but it also helps to reduce cholesterol.

It’s important to have a variety of plants in the diet to keep a healthy gut microbiome and chia seeds and strawberries form part of a healthy diet.

Strawberry chia pudding
Instructions
  1. Add 1/4 cup chia seeds to a storage jar/container and add 1/2 cup of almond milk.
  2. Stir thoroughly and add 3 tbsp strawberry yoghurt.
  3. Add 1 tbsp cashew nuts and thoroughly stir the chia seeds again. They can sometimes gather at the bottom and an extra stir will ensure a nice consistency.
  4. Rinse and chop strawberries and add to the top of the chia mixture.
  5. Leave to refrigerate overnight.
  6. Tip: You can also include protein powder and if so, add additional almond milk or water to compensate for the powder.
